Moroccan Red Lentil soup
Bursting with flavour, this rich and comforting spice-laden soup is oh-so-easy to prepare. It’s a delicious and satisfying choice for lunch.

Ingredients
- 30g red lentils
- 120ml vegetable stock
- 10g onion
- 20g carrot
- 5g celery
- 5g garlic
- 5g ginger
- 20g tomato
- 3g turmeric powder
- 2g cumin powder
- 10ml olive oil
- 1 lime
- 3g salt
- 1g paprika powder
- 5g organic yogurt
Method
- Slice the onion, carrot, celery, ginger and tomato into small pieces

Put the sliced onions, carrots, celery, ginger, lime, olive oil and tomato into the pot and cook for a couple of minutes until the vegetables are soft.

Add the garlic, red lentils, cumin powder and turmeric powder, fry for a minute or two then add the stock. Bring to the boil and simmer gently until everything is cooked.

Ladle into bowls and decorate with organic yogurt and paprika powder
- If you would prefer a smoother soup, the mixture can be blitzed in a food processor at the end
